They started with a mutation from that species, which lacked a crucial gene enabling it to thrive at high temperatures. Over successive generations, they gradually upped the temperature. The surviving strains, of course, were those that had regained their heat-resistant capabilities. Interestingly, though, they evolved this ability through mutations in a completely different area of the genetic code than where it had originally been "damaged".
